Llave de Oro - Andres Bazos - Rainforest Alliance - Estate Lot

Llave de Oro - Gold Key - is an estate lot from Andres Bazos, whose family have farmed in Sanchirio Palomar, Chanchamayo for over 80 years. The farm grows Caturra, Catimor, and Bourbon across 36 hectares in Peru's Junin region and carries Rainforest Alliance certification.

Andres inherited the farm from his great grandfather, but the version of Llave de Oro that exists today is very much his own. Over the last decade he has pushed hard into specialty coffee - learning, experimenting, and overhauling how the farm processes its coffee from the ground up. The results are hard to argue with: 50,000 kilos of green coffee a year, produced with a level of precision that shows at every stage.

Processing is done entirely in-house. Only fully ripe cherries are picked, sorted, and sealed into stainless steel tanks for a 24-hour anaerobic fermentation. The coffee is then pulped and fermented for a further 24 hours in ceramic tanks before moving to raised beds in a dedicated drying room, where it dries down to 10 to 11% moisture.
